Creamy Papaya Milkshake!

I adore papaya!  I've only recently began eating it.  The only way that I ever had it while growing up was in the can, you know what I'm talking about right?

I love this stuff, but the real stuff is SO much better if you can find it!

I, however, could NEVER find the actual fruit in any grocery store, and it honestly never even crossed my mind to really go out and look for it either.  All of that changed when my son was born and I began making my own baby food.  I had read about the amazing health benefits of papaya such as it begin good for your skin, eyes, improving digestion, preventing heart disease, and being wonderful for your immune system just to name a few and being loaded with vitamins C & A.  I was finally able to locate a store that sold it and my son, as a baby LOVED it when I would mash it up and serve it to him and to this day still loves it just as much.  It's the perfect taste as it's not overwhelming, but has more of a creamy texture that tastes so heavenly!  In fact the conquistadors dubbed papaya as the fruit of the angels because it tasted that good to them!
I took this photo a few months ago, but you can just see how big this fruit in comparison to my (then) four year old son :).

We just purchased some papaya from the local Asian store and decided to try it as a shake.  Oh man was it delicious!  When I drank it I just felt this feeling of deliciousness and health filling me up!

CHEAP DIY Earring Holder!

I purchased these Tolsby Photo Frames from Ikea for my son's 5th Birthday party and used them as sign holders.  I had remembered seeing this floating around the internet somewhere... so right after his party I repurposed them to create these super cute earring holders!

Here's how I did it:

1 Tolsby Photo Frame from Ikea .99
1 Cross Stitch from Michaels craft store .59

1.  Measure and cut the cross-stitch to the same size as the plastic sheets that were provided with the Tolsby frame.
2.  Slide the cross stitch in the top opening of the frame.
3.  Place earrings and marvel at how EASY that just was!
Enjoy! :)

I'm Still Here!

I fear that I have failed you, my dear readers.  As I was realizing the other day that I had not blogged in a long time.  In fact, it has been nearly two years since the last time I posted, and that is unacceptable.  So as part of a late New Year's resolution I am going to attempt to make up for lost time and blog as much as I am feeding my addiction, Pinterest.
To up-date you a little bit, I am still in the freezing state of Minnesota, my husband and I both decided to plunge back into being students again, my son will be 5 in two weeks, and tomorrow my husband and I will celebrate being together for seven whole years!  So many memories, so much time, and so much more to come!  I started Ginger.Lime.Coconut as an ode to my love of food, but I have decided that I will divulge into much more than just cuisine.  Pinterest and Instagram are a huge part of this and has motivated me to love seeking out and completing DIY projects among other things... In the beginning...

Welcome to Ginger.Lime.Coconut!  I began blogging years ago, but I never really found my niche until I rediscovered my love of food.  "Food" has been growing on me since I was in 4-H in elementary school.  I always dreaded the sewing part, but became quite excited when we had to do a cooking demonstration.  In the following years I had a love/hate relationship with food.  I never really knew what to do with the ingredients in my kitchen and was quite aggravated at times dreading having to cook yet again!  It wasn't until I moved to Chicago when my passion was rekindled and I truly fell in love with food.  I began seeing food as "art" and was quite thrilled when I read menus at restaurants or food blogs on the internet.
I became a mom and switching from the working world to being a stay at home mom was a shock to my system.  I learned to go back to my country roots from where it all began and pick up little things I had learned along the way to where I now feel quite comfortable throwing a dish together at the spur of the moment or mapping out weekly menu plans.
It took awhile to get to this point, but I'm happy I finally found my way back!

So you may wonder... why Ginger.Lime.Coconut?  When I moved into my first apartment and didn't know what to make I bought a lot of canned items.  Sometimes I stuck closer to my comfort zone, but occasionally I'd go and grab something just because.  One of those times I walked down the asian aisle of the grocery store and as I was browsing a canned soup caught my eye.  The can read "Tom Kha Gai" and I thought "hmmmmm why the heck not?"  I threw the can in my cart and headed home.
A few weeks later when I had gotten home from work and was about to make dinner I realized that I didn't have anything that sounded good.  As I was looking through my cupboards I found the can of soup pushed way far in the back. I felt a little bit daring so I opened the can and heated it up.  A beautiful aroma filled the air so creamy and fragrant yet light and refreshing and I thought "well this will be good!"
As I took my first bite the broth was so smooth and velvety as it glided down my throat and it was oddly thin and light at the same time.  The flavors of creamy rich coconut, zesty ginger and sweet yet acidic lime exploded in my mouth.  I loved how they complimented eachother yet you could tell distinctively what each flavor belonged too.  Since tasting Tom Kha Gai soup I have experimented with these three flavors in combination and individually and they are among my top favorite ingredients when I cook.  They sound like two ordinary fruits and one ordinary vegetable, but individually and together they really pack a powerful punch!

Here's a relatively simple recipe found on allrecipes.com
